Spicy sweet potato burger

We love a good veggie burger (sometimes more than a meat burger!). This recipe is super simple but absolutely packed full of fresh, zingy and spicy flavours that are just made for pairing with a beer! Badger Beer’s The Legendary Tangle Foot is a beautiful ale, subtly hopped and a great accompaniment to food, especially spicy food!

You can also enjoy these burgers without a bun, top with a poached egg it makes a fantastic lunch.

Ingredients

2 medium sweet potatoes
165g canned sweet corn
2 eggs
60g ground almonds
60g plain flour
1 tbsp garam masala
1 tsp salt
Black pepper

For the slaw
Half a red cabbage
Half a white cabbage
1 red onion
1 unripe mango
Juice of 1 lime
2 tbsp red wine vinegar
Salt

For the coriander salsa
30g coriander
1 green birds eye chilli (leave out if you don't like it hot!)
1 garlic clove
25ml olive oil (use more if you need it)

Curry mayo
3 heaped tbsp mayo
1 tsp curry powder

6 burger buns

Instructions 

Heat an oven to 180C and cook the sweet potatoes, skin on for around 35-45 minutes, or until soft. Allow to cool and scoop the flesh from the skins, mash until smooth.

To the sweet potato mash add the drained sweetcorn, eggs, almonds, flour and garam masala. Mix together until the mixture is combined and not too sticky. If it feels too wet and a little more flour until it comes together. Cover and refrdgerate for at least 30 minutes to allow the mixture to rest and solidify.

To make the slaw simply finely slice the cabbages, mango and onion. Add the lime juice, vinegar and seasoning.

For the coriander salsa simply blend all of the ingredients together.

For the mayo just mix together, it’s a simple as that!

To cook the burgers, dust lightly with plain flour and shallow fry in vegetable oil until a crust forms, about 4 minutes on each side. Don’t move around too much in the pan to prevent the burgers breaking.

Serve on a burger bun of your choice with all of the toppings. Crack open a Badger Beer The Legendary Tangle Foot and enjoy!
